This coffee is sourced from various farms in the Huila department of southern Colombia. It is part of what the Colombian Coffee Growers Federation calls the New Coffee Triangle alongside the Nariño and Cauca departments. Farms in the area are usually smaller and situated at higher altitudes than in the northern regions.
Though this coffee was washed at origin, it has been decaffeinated by Swiss Water in Vancouver. Their process excels at maintaining the unique elements of origin while removing caffeine. The result process gives malt & cherry notes to this coffee.
