Huila is a southwestern department of Colombia. It is the country's biggest coffee producer, even though it is mostly composed of small farms. The secret behind their productivity is that the farms all have their small micro beneficio, or processing station.
This coffee is sourced from Esnaider Ortega and his farm Finca Villa Maria in San Augustin, Huila. The first generation of the Ortega family were pioneers of coffee production in the village of San Agustin. Three generations later, Esnaider Ortega-Gomez, and his grandfather Don Olgar Ortega-Bolaños, are now owners of Finca Villa Maria. Esnaider is a driving force behind Monkaaba, a small cooperative of small freehold farmers, who work to ensure farmers get the best price for their hard work and are treated with respect, by establishing genuine, direct trade relationships with small businesses and roasters.
The resulting cup reminds us of cocoa and chocolate cake.
