This coffee is sourced from El Edén, a family farm in Fresno, northern Tolima. The farm is owned and operated by Marta Bayter and her two sons, Shady & Elias. Driven by improving cup quality, the Bayter family are always experimenting with processing technology and interesting varietals.
This Java varietal has been processed through an anaerobic fermentation. Coffee beans are placed in sealed tanks and all oxygen is removed. This 60 hour long process converts acids into sugars. What is unique in the Bayters' approach comes after the fermentation: the beans are dried intermittently between the sun and shade.
