Signature Blend is one of their main blends, formerly known as Fullum. It was created and roasted to be enjoyed both as an espresso and as filter coffee.

The blend is composed of three main origins. The first is a natural Brazilian coffee from Fazenda Barreiro in the Poços de Caldas region.

The second is another natural Brazilian coffee from Fazenda Recreio in the Vale da Grama region.

The third is a natural Rwandan coffee from various farmers around the Nyamyumba washing station.

The resulting cup evokes notes of milk chocolate, praline, and caramelized nuts.

À la première infusion, j’ai obtenu un café très fort. J’ai donc ajouté un peu plus d’eau lors de ma deuxième tentative et le café a finalement révélé ses arômes. Je crois donc qu’il bénéficie d’un ratio eau:café un peu plus élevé. Avec cet ajustement, le café est doux et bien équilibré. Idéal pour le café du quotidien.

It’s good. Some earthy, nutty tones, generally well-balanced acidity. Lacks body, but works well in milk drinks.

I'd love to know how it was prepared so that we can try to improve your experience. It says on the review that you used french press. Is that correct? Here is our preferred recipe for french press so you can try it the way we enjoy it. https://kittelcoffee.com/en/pages/presse-francaise Normally, Signature is more popular on espresso but we enjoy it very much as filter too. It is not a particularly complex coffee, but offers consistently sweet and nuanced cups with notes of chocolate, nuts, and subtle fruit. Decent! In espresso form. I wouldn't say it is too acidic, it is simply hard to dial in. The resulting cup is balanced but lacks complexity for my taste. Not to self: 16.5g in, 30 out in ~ 30s, 97°.

Hi Benjamin. Signature is our most popular coffee in large part because of how easy it is to work with. We find shots consistently pull with almost no need for dialling after the initial preparations which is why I wanted to respond so you can try some other parameters. Regarding your shot recipe, that feels very short. I believe this is why you're experiencing such acidity. If you visit our website, you can see the recommended ratio for each coffee. For Signature we recommend 2.3:1. For 16.5g of input that would be 38g out; quite a bit longer than what you've prepared. Another note: 97º is very hot for an espresso machine. The standard recommended temperature is 92-94º C. If your machine has the option to adjust this I would recommend doing so as you should expect better extractions overall. If not, you can purge some water before your shots.
