This coffee is sourced from Antonio Recinos in Santo Domingo Las Flores, Huehuetenango. The Recinos family have been producing top quality coffee for generations at Finca Nueva Armenia, and Antonio is continuing this tradition all while exploring different processing methods, isolated varieties and continuous experimentation.
This specific lot of Pache San Ramon from Antonio’s personal farm underwent two anaerobic fermentations in plastic bioreactors. The producers inoculated the coffee with Lachacea Spp bacteria, which produced lactic acid. These bacteria are generally used in wine and beer production, particularly in the development of sour beers.
The resulting cup reminds us of wine gummies, nougat and grape.
