On his farm, Jose Ignacio has chosen to cultivate varieties like Bourbon Rosado and Caturra, which thrive in the unique climate and altitude conditions of Santa Maria. These beans benefit from a meticulous process that begins with 12 hours of oxidation in cherry followed by another 30 hours in mucilage. They are then carefully dried in drying tents, ensuring the beans reach optimal moisture levels and retain their full flavour.
