This coffee is sourced from Lucila Del Carmen Colindres and her farm, Finca El Bosque, in El Paraíso. She and her husband decided to return to the family farm after finishing their university degrees in law and medicine. The city life just did not support the environment they wanted to raise a family in. As second generation coffee producers who own and manage Finca El Bosque, a 75-acre estate, the couple is always looking for ways to innovate.
This specific lot was tended by Lucila herself, and was grown at the highest altitudes of the farm. She only picked Parainema cherries, a varietal specific to Honduras, since it is known for its high yield and disease resistance. It offers unique herbal flavours that tend to taste more savoury than sweet.
The resulting cup reminds us of peach, grape and honey.
