Los Angeles Estate

The Canales Family were the inaugural winners of the Cup of Excellence in Nicaragua. Don Daniel has 4 sons who've carried on the tradition of producing high-end specialty coffee in the Pueblo Nuevo Region. Estate Los Angeles has been in the family for 15 years and has been administered and worked by Norman Canales (Middle Brother) for the past 5 harvests since its replantation. During this period, new varietals (parainema) were introduced to the estate to complement the original varietals like Catuai, Caturra, and Bourbon. These coffees are fermented for 24-30 hours, sun-dried for 3 days, and then moved to shade to extend the drying process for another 18-21 days. Coffee is then stored for up to a month to ensure optimal rest for green beans to settle.
