San Marcos is a department in northwestern Guatemala, on the Pacific Ocean and along the western Guatemala-Mexico border. The northern portion of the department is mountainous, being crossed by the Sierra Madre de Chiapas mountain range.
This coffee is sourced from Cafe Colis Resistencia, a group of Xincan producers farming coffee on communally owned land. They're one of the recent organizations of the indigenous Xinca people rooted in self determination and collectivism, fighting back against centuries of colonialism.
The washed process gives this coffee notes of milk chocolate, hazelnut, and strawberry jam.
