Huila is a southwestern department of Colombia. It is the country's biggest coffee producer, even though it is mostly composed of small farms. The secret behind their productivity is that the farms all have their small micro beneficio, or processing station.
This coffee is sourced from Nohora Sepulveda de Zambrano and her son Edwin Zambrano Sepulveda at Finca La Foresta in Algeciras, Huila. During the main harvest, between June and July, Nohora and Edwin employ up to 25 local pickers to carry out the cherry collection. Doña Nohora carries out the post-collection processing, while Edwin processes his own coffee.
The resulting cup reminds us of bubble gum, passion fruit and blackberry jam.
