Chiapas is the southernmost state in Mexico, with a coastline along the Pacific Ocean to the South. The state borders the Guatemalan coffee-growing region of Huehuetenango.
This coffee is sourced from a community of farmers from the town of Jaltenango, Chiapas. In Chiapas, coffee grows from 1300-1700 m above sea level. It is grown by more than half a million farmers, 95% of these being smallholders cultivating less than three hectares, and 85% of Mexico’s coffee farmers are indigenous Mexicans.
This specific lot is made up of Caturra, Bourbon and Typica varietals, and are certified organic.
The resulting cup reminds us of chocolate, brown sugar & blood orange.
