Huila is a southwestern department of Colombia. It is the country's biggest coffee producer, even though it is mostly composed of small farms. The secret behind their productivity is that the farms all have their small micro beneficio, or processing station.
This coffee is sourced from five growers in the town of Rica Brisa, Huila: Mayerli Trujillo, Fander Trujillo, Jose Ernesto Erazer, Eliecer Nunez, Yelson Trujillo. They created this lot purely made of the Colombia varital, a Caturra & Timor hybrid bred for better resistance to the Coffee Leaf Rust disease, and name it El Sapo (The Toad).
The resulting cup reminds us of dried apricot, nectarine and apple pie.
