Cajamarca is a northern department of Peru that is part of the Andes Mountain Range and has a portion of its territory in the Amazon Rainforest. It also shares a border with Ecuador.
This coffee comes from 167 producer families belonging to the El Milagro cooperative in San José de Lourdes, Cajamarca. Despite its difficult location in the high Andes, the cooperative has an office and tasting laboratory, and has recently invested in closed drying structures. This has enabled members to improve their drying techniques. Since 2015, it has also launched a micro-lot program. This gives growers feedback on tasting, a desire to improve quality and general encouragement.
The resulting cup reminds us of milk chocolate and pinot noir.
