Huila is a southwestern department of Colombia. It is the country's biggest coffee producer, even though it is mostly composed of small farms. The secret behind their productivity is that the farms all have their small micro beneficio, or processing station.
This coffee is sourced from small farmers in Huila. Though it was washed at a processing station at origin, the green coffee beans were aged in barrels of Kinsip rye whisky, a locally crafted spirit in Prince Edward County, Ontario. While inside the barrel, the coffee take in all the flavour that is left in the wooden barrels. This is where all the flavour characteristics are developed.
The result is a funky cup of coffee reminiscent of pineapple cake and spiced rum.
