The majority of farmers are smallholders, which has made the recovery effort quite arduous. Production has been on the rise since 2016 and Chiapas has become Mexico's top coffee-producing region.
This coffee was decaffeinated through the Swiss Water process. The caffeine was extracted through a caffeine-free green coffee solution while retaining the flavour components in the coffee beans. This process results in coffee that is 99.9% caffeine-free.
The resulting cup reminds us of almond butter, cacao, and lemon.
