Cajamarca is a northern department of Peru that is part of the Andes Mountain Range and has a portion of its territory in the Amazon Rainforest. It also shares a border with Ecuador.

This coffee is sourced from the farmers associated with the APROCASJ coop in San Juan, Cajamarca. Founded in 2016, the coop is committed to using good agricultural practices and certifications to improve the income & living conditions for its members. At the time, they were called San Juan Coffee Producers Association. They became APROCASJ (Asociación de Productores Cafetaleros Agroecologicos San Juan) officially in March 2019 and now include 233 members.

The resulting cup reminds us of caramel, shortbread and pecan.
