Huila is a southwestern department of Colombia. It is the country's biggest coffee producer, even though it is mostly composed of small farms. The secret behind their productivity is that the farms all have their small micro beneficio, or processing station.
This coffee comes from Angel Ortega and his cousin at their farms in San Augustín, Huila. Angel is a second generation coffee grower who began growing coffee as a teenager alongside his father and brother. This specific lot is a blend of Angel’s famous Pink Bourbon and his cousin’s Yellow Colombia. The blend of the two bring a balance between the high acidity of the pink bourbon and the deep sugary notes of the Yellow Colombia.
The resulting cup reminds us of pomelo & caramel.
