La Paz is a southwestern department of Honduras that is bordered by El Salvador. The region is known for its coffee production, boasting the first and only "protected origin denomination" for coffee in the country due to exceptional soil quality, agricultural and processing techniques.
This coffee is sourced from Christobal Alexis Chicas and his farm El Trapiche in Marcala, La Paz. He is a second generation producer and has been working on this farm since he was a small boy. His own son has also started to work on the farm, and is looking to continue with the family business.
El Trapiche is certified 100% organic and is focused on production techniques respectful of the environment, like organic fertilizer made from the farm's refuse.
The honey process gives this coffee notes of cacao, mango and red berries.
