Chiapas is the southernmost state in Mexico with a coastline along the Pacific Ocean to the South. The state borders the Guatemalan coffee-growing region of Huehuetenango.
Coffee production in this region is not without its challenges. It was hit hard by the leaf rust epidemic in 2013 due to its proximity to Central America. The majority of farmers are smallholders, which has made the recovery effort quite arduous. Production has been on the rise since 2016 and Chiapas has become Mexico's top coffee-producing region.
This coffee was decaffeinated through the Swiss Water process. The caffeine was extracted through a caffeine-free green coffee solution while retaining the flavour components in the coffee beans. This process results in coffee that is 99.9% caffeine-free.
The resulting cup reminds us of cranberry, cocoa & fruit cake.
