Blue Ayarza
Santa Rosa is a department of Guatemala and is located in the south of the country on the Pacific Coast. The fertile volcanic soils of the southern lowlands bring forth a luxuriant tropical vegetation, but has to give way to the majority of agriculture.
This coffee is sourced from more than 1000 small producers around Laguna de Ayarza, Santa Rosa. Laguna de Ayarza is a crater lake known locally as Laguna Azul (Blue Lake) and was formed around 20,000 years ago by a volcanic eruption. According to local legend, the true nature of the lake is far more mysterious. Some say it is connected to ocean, the actual depth is unknown and that an expedition to find the bottom ended in tragic failure.
The natural process gives this coffee notes of blackberry, honey, and cacao nibs.
