Huila is a southwestern department of Colombia. It is the country's biggest coffee producer, even though it is mostly composed of small farms. The secret behind their productivity is that the farms all have their small micro beneficio, or processing station.
This coffee is sourced from Alexander Suarez Figueroa at Finca Mirasol in Acevedo, Huila. Finca Mirasol was named by Alexander’s grandfather and translates to “Sunflower Farm”. Despite the many challenges of coffee farming, three generations of the Figueroa family successfully overcame any obstacles together. With the family legacy on his shoulders, Alexander maintains to produce the highest quality in coffee. Once the cherries are hand selected at their peak ripeness, they are fermented in two stages; first with the whole cherry in bags for 40+ hours, then they are washed and left out to dry on a marquee for 15 days.
The resulting cup reminds us of concord grape, lemon custard and jasmine.
